I'm finally starting to feel better, and decided to try something that's been on my to-do list for awhile. And hey, increasing my veggie intake certainly can't hurt the mending process!
Today, me hearties, you learn about my very favorite spice - chipotle chile powder. I use it as often as I can. I love the warm smokiness that it brings to any dish. I highly recommend it and think no kitchen should be without it.
You will need:
1 head of cauliflower
2 large eggs
1/2-1 c Shredded cheddar cheese
1/2-1 c Panko bread crumbs
1/4 tsp Cayenne pepper
1/4 tsp Chipotle chile powder
Salt
Olive oil
Separate the cauliflower into florets and boil until fully cooked, about 10ish minutes. Drain, put the cauliflower in a large mixing bowl, and mash while still warm.

Add in the eggs, cheese, panko, and spices. Mix well.
I started with 1/2 c panko, but ended up adding extra, perhaps up to as much as a total of 1 to 1-1/4 c. The mixture was still fairly wet but at that point could be formed into patties that stayed together in the skillet. While the original recipe called for half a cup of cheese...well... I'm sure you all know by now my thoughts on how much cheese should go in a recipe. ;-)
Preheat your skillet with a little olive oil, and pan-fry the patties on each side until they've browned to your liking.
As you can see, I like mine fairly dark and crispy. These are very yummy, and the crisp outside contrasts nicely to the soft, spicy inside. They can make a good snack, or even as part of your breakfast.
