You will need:
-- Your preferred pancake mix (I haven't found a homemade version I like yet; if you have a good one, please pass it along!)
-- A mini muffin tin
-- Cooking spray
-- Chopped fruit (or chocolate or peanut butter chips...or both)
Set your oven for 350 degrees and spray the muffin pan well with your cooking spray. Mix up the pancake batter per the directions, then add your chopped fruit. Come on, more than that. Don't be stingy! ;-) Using a spoon, fill the muffin tins 1/2 - 2/3 full, then bake in the oven for approximately 15 minutes. The bites will be fully baked by 12-13 minutes; if you want them to brown you will need to leave them in closer to 18-20 minutes. For my oven, I set the timer for 17 or 18 minutes and then check their color.
I must emphasize that you spray your pan very well otherwise these WILL stick and be difficult to remove. I keep a plastic knife on hand to help pull them out, and I remove them from the pan as soon as I take them out of the oven. I prefer to serve these warm with a little butter melted on top and with maple syrup for dipping, but you can treat these like any pancakes and accessorize them however you like.
