You will need:
1-2 eggs
Liquid egg whites (optional)
Salt and pepper
Chopped green pepper
Chopped onion
Chopped ham
1 tortilla
For garnish:
Shredded cheese, salsa or picante sauce, and sour cream (not pictured)

Mix the egg(s) and/or liquid egg whites in a bowl. Add in a small dash of salt and pepper. Heat up a small nonstick skillet over low heat and pour in your egg mixture. Sprinkle in the pepper, onion, and ham to your liking, then cover the skillet to cook the top of the eggs. Check frequently to ensure thorough cooking; if necessary tilt the skillet and pull the edges of the cooking egg into the center to allow the uncooked eggs to flow to the skillet edge. Once the top has set you can fold into an omelette shape or simply let it be. Turn off the heat and pile that eggy, veggie goodness into your tortilla for a quick and tasty breakfast you're sure to enjoy!
Top with whatever garnishes you prefer. I listed mine above and here is the finished product...before I chowed down on that deliciousness.
I admit I'm technically a day late in posting since I made this yesterday, but I can tell you that I had the leftovers for breakfast today and it was just as yummy as yesterday. :) I hope you enjoy, and if there is something you'd like to see me attempt, let me know!
