There is a reason the title has quotation marks - this is not a real quiche. I'm not even sure if it counts as a crustless quiche, if I'm completely honest, lol. But I'm experimenting in the kitchen and wanted to share my continued fixation on portobello mushrooms. ;-)

Milk (I used approx. 3/4-1 c)
S&P
Chopped mushrooms (I used leftovers I had already sautéed with garlic)
Chopped spinach
Shredded cheese (optional)
Bacon (optional)
Yeah, I'm doing it again. That whole "not measuring" thing that hopefully isn't driving you all crazy! But just like chocolate chip cookies, you can't really measure these additions - it's however much looks right to YOU. :)
Set your oven for 350 and spray a pie pan or other small baking dish with non stick cooking spray.. Mix the eggs and milk til well blended. Add in salt and pepper, stir again. Pour egg mixture into baking dish, then add in your other ingredients.

4 strips of bacon, crumbled
3/4-1 c shredded mozzarella cheese
Bake at 350 for 45 mins. Let it sit and cool a little, maybe 5-10 mins...if you can wait that long. :) I thought I would have to freeze some, because this makes too much for one person to eat before it goes bad. Then the man came over tonight and gave it a taste test....let's just say he gave his approval. And I no longer need to put any in the freezer. ;-)
